In Britain, turnips have primarily been used as cattle fodder, leading to an unfortunate image problem. In comparison, other nationalities view this vegetable much more positively and have put it to many imaginative uses. The French braise or sauté turnips, Italians use them in delicious risottos, and sweet roasted turnips have long been popular in China. They are also nutritionally rich, full of vitamin C, manganese, potassium and fibre.
